ingredients

  • 10 ounces plant-based chorizo, cooked according to the package
  • 1 (10 ounce) can Tomato Love Medium Diced Tomatoes with 2x Green Chilies, drained
  • 1 ½ cups Red Gold Petite Diced Tomatoes
  • Juice from 2 limes
  • 1 handful cilantro
  • 1 large clove garlic
  • ½ large red onion, chopped
  • ½-1 teaspoon sugar, or to taste
  • ½-1 teaspoon salt, or to taste
  • ½ cup sour cream
  • 1 cup guacamole (homemade or pre made)
  • 1 ½ cups shredded cheese
  • Sliced green onions and black olives for topping
  • Tortilla chips, to serve

Method

  • Step 1

    Cook “chorizo” according to package instructions and set aside to cool.

  • Step 2

    Make salsa by blending tomatoes, red onion, garlic, cilantro, lime juice, salt, and sugar for 10-15 seconds in a blender. Set aside.

  • Step 3

    In a dish, layer chorizo, guacamole, sour cream, salsa, cheese, sliced green onion, and sliced olives.

  • Step 4

    Serve dip with tortilla chips.
