ingredients
- 1 1/4 cups plus 2 tablespoons sugar, divided
- 3/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 10 tablespoons butter, melted
- 3 eggs
- 1/2 cup plus 2 tablespoons flour, divided
- 1 teaspoon baking powder
- 1 cup cream cheese
- 2 tablespoons butter, softened
- Raspberries, for topping
Method
Step 1
Preheat oven to 350°F with rack in upper third. Grease an 8" x 8" pan with butter, line with parchment paper.
Step 2
Whisk together the melted butter, 1 1/4 cups of sugar and cocoa powder in a medium bowl. Add the vanilla and salt. Add 2 eggs and whisk. Finally add 1/2 cup of flour and baking powder and mix in. Spread batter in prepared pan.
Step 3
For the cream cheese layer stir together cream cheese with the softened butter, 2 tablespoons flour and 2 tablespoons sugar until smooth. Dollop mixture onto batter and use a knife to swirl mixture into brownies. Press fresh raspberries on top.
Step 4
Bake for around 35-40 minutes. Let cool completely before slicing and serving.
