For the Pasta

  • 2 cups rotini noodles
  • 1/4 cup reserved pasta water
  • 1 1/2 cups heavy cream
  • 2 tablespoons Red Gold® Roasted Garlic Tomato Paste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Mexican-style cheese
  • 1 tablespoon freshly chopped cilantro

  • 1 pound NY strip steak, cut into 1-inch cubes
  • 2 tablespoons avocado oil

  • 1 teaspoon kosher salt
  • 1 teaspoon chipotle chili powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For the Fajita Veggies

  • 2 cups sliced red, green, and yellow bell peppers
  • 1 cup sliced onion
  • 1 tablespoon fresh minced garlic
  • 2 tablespoons avocado oil

Pasta Seasoning

  • 1 teaspoon kosher salt
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder

Method

  • Step 1

    Boil rotini noodles in salted water over medium heat for 7 minutes or until al dente. Reserve ¼ cup of the pasta water and drain the rest.

  • Step 2

    Season steak cubes with steak seasoning (salt, chipotle chili powder, black pepper, garlic powder, and onion powder). Drizzle with avocado oil and toss to coat.

  • Step 3

    Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat. Add the steak and cook for 2 minutes per side for a medium-rare finish. Remove from the pan and set aside.

  • Step 4

    In the same skillet, reduce heat to medium and add 2 tbsp of avocado oil. Sauté the bell peppers, onions, Red Gold® Roasted Garlic Tomato Paste, and fresh garlic. Cook for 6 minutes, stirring occasionally, until the veggies are tender. Season with salt and pepper to taste.

  • Step 5

    Pour in the heavy cream and add the pasta seasoning (salt, chipotle chili powder, black pepper, and garlic powder). Stir well, then add the reserved pasta water. Simmer for 7 minutes until the sauce thickens.

  • Step 6

    Add the cooked pasta, Parmesan cheese, Mexican-style cheese, and cooked steak to the skillet. Stir until everything is evenly combined and heated through.

  • Step 7

    Serve in pasta bowls and garnish with chopped cilantro and freshly grated Parmesan.
