  • 1 (10 ounce) bag Cascadian Farm Frozen Cut Spinach, cooked and drained
  • 1 (8 ounce) can artichoke hearts, drained and chopped
  • 4 ounces (1/2 block) cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 3 garlic cloves, minced
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon garlic salt
  • Freshly ground pepper, to taste
  • 12 egg roll wrappers
  • Fresh chopped parsley (optional), for topping
  • Grated parmesan cheese (optional), for topping

Method

  • Step 1

    In a large bowl, combine the spinach, artichoke hearts, cream cheese, shredded mozzarella cheese, sour cream, mayonnaise, minced garlic, dried basil, garlic salt, and ground pepper. Mix thoroughly to combine.

  • Step 2

    Take one egg roll wrapper at a time and add just under a ¼ cup of the filling to the center of the wrapper.

  • Step 3

    Using your finger, run water along the edges of the wrapper.

  • Step 4

    With the wrapper placed like a diamond facing you, fold up the bottom point, then fold each side over, then roll the rest of the egg roll up. Press on the edges to seal. Repeat for all egg rolls.

  • Step 5

    Spray olive oil in the basket of an air fryer. Place the egg rolls in the air fryer basket, leaving some space between each. Lightly spray the tops of the egg rolls with the olive oil spray.

  • Step 6

    Set the air fryer to 400°F for 6 minutes. Cook, then flip the egg rolls, lightly spray with oil, and cook for an additional 6 minutes or until crispy and golden brown.

  • Step 7

    Top egg rolls with parsley and grated parmesan. Serve with dip if desired.
