ingredients

  • 1 (8-ounce) package soba noodles
  • 2 cups sliced mushrooms
  • 3 bok choy, sliced
  • 2 tablespoon toasted sesame oil
  • 1/4 cup tamari
  • 2 tablespoon rice vinegar
  • 1 teaspoon maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1/2 teaspoon sriracha
  • 1/2 teaspoon chili flakes
  • 1 teaspoon sesame seeds
  • 1/4 cup cilantro leaves

Method

  • Step 1

    Cook the noodles. Run under cold water and add some oil to avoid them sticking together. Set aside.

  • Step 2

    In a wok, heat the sesame oil and sauté the sliced mushrooms for 5 minutes, then add the sliced bok choy and continue sautéing for another 5 minutes over a medium heat.

  • Step 3

    Meanwhile, in a separate bowl, combine tamari, ginger, garlic, rice vinegar, chilli garlic sauce, maple syrup and mix well.

  • Step 4

    Add the sauce to the veggies and add the noodles. Toss to combine.

  • Step 5

    Top with cilantro leaves and sesame seeds, enjoy!
