Gluten Free Banana Waffles With Blood Orange And Almonds

Everything under the sun toppings are right up my alley. I love these!
2 ripe bananas
3 large eggs
75 ml milk of choice
120 g buckwheat flour/almond flour/rice flour/any GF flour
1 tbsp baking powder
pinch of salt
vanilla powder/extract
30 g melted and cooled butter/coconut oil
Mash the bananas - it's okay to let some lumps remain. Add the eggs & milk and mix well.
Add vanilla, salt, flour and baking powder. No need to overtax the batter. Finish by adding the melted butter/oil.
Grease the waffle iron and bake until golden brown. They will not be as crispy as regular waffles though.
Can be kept warm on a rack in the oven at low temperature.
Toppings
dollop of sheep's yoghurt
blood orange, peeled and sliced thinly
15g chopped almonds
1-2 tsp bee pollen
1 tsp cocoa nibs
10-20g dark chocolate
Melt the dark chocolate.
Stack or arrange 3 waffles on a plate, top with yoghurt, sliced blood orange, almonds, bee pollen, cocoa nibs and drizzle with the melted dark chocolate. Enjoy!
