For the Toast
ingredients
- 1 slice of sourdough bread, toasted
- 1/4 cup caramelized onions
- 1/2 tablespoon chopped parsley
- 1 tablespoon grated parmesan
- 1 crispy fried egg in garlic butter
For the Caramelized Onions
ingredients
- 1 pound yellow onions, Thinly sliced
- 1 teaspoon soy sauce or tamari
- 1 tablespoon bacon fat or neutral oil
- 1/2 teaspoon maple syrup
- 1/2 teaspoon mirin
For the Caramelized Onions
Method
Step 1
In a large non stick pan on medium high heat, add a Tbsp of the bacon fat. Once the fat starts to sizzle, add the sliced onions. Stir the onions every 5 minutes, so they don’t burn, for 30 min. When you have 5 minutes remaining until they’re finished, add the Mirin, soy sauce, and maple syrup. Once the onions are sticky and a deep caramel brown, take them off the heat.
For the Fried Egg
Step 1
Add a tbsp of butter to a medium non stick pan on medium heat along with 2 minced garlic cloves. Sauté the garlic for 2 minutes and crack in your egg. Cover the egg with a lid and cook until the whites set. Reserve.
To Assemble the Toast
Step 1
Smooth the caramelized onions over the toasted slice of sourdough. Add your crispy fried egg on top and finish with the grated Parmesan and chopped parsley.
