My secret for the most delish caramelized onions is that I cook mine in bacon fat, and towards the end I like to drizzle in a bit of maple syrup and soy sauce! . . ⭐️What are you all doing for Mother’s Day????? My sister and I will be having a make your own toast station, mimosas, and Ube Mochi pancakes that she bought from Trader Joe’s and was super excited about! Our mom doesn’t drink, but we’re hoping she’ll have at least one mimosa lol"

For the Toast

ingredients

  • 1 slice of sourdough bread, toasted
  • 1/4 cup caramelized onions
  • 1/2 tablespoon chopped parsley
  • 1 tablespoon grated parmesan
  • 1 crispy fried egg in garlic butter

For the Caramelized Onions

ingredients

  • 1 pound yellow onions, Thinly sliced
  • 1 teaspoon soy sauce or tamari
  • 1 tablespoon bacon fat or neutral oil
  • 1/2 teaspoon maple syrup
  • 1/2 teaspoon mirin

For the Caramelized Onions

Method

  • Step 1

    In a large non stick pan on medium high heat, add a Tbsp of the bacon fat. Once the fat starts to sizzle, add the sliced onions. Stir the onions every 5 minutes, so they don’t burn, for 30 min. When you have 5 minutes remaining until they’re finished, add the Mirin, soy sauce, and maple syrup. Once the onions are sticky and a deep caramel brown, take them off the heat.

For the Fried Egg

  • Step 1

    Add a tbsp of butter to a medium non stick pan on medium heat along with 2 minced garlic cloves. Sauté the garlic for 2 minutes and crack in your egg. Cover the egg with a lid and cook until the whites set. Reserve.

To Assemble the Toast

  • Step 1

    Smooth the caramelized onions over the toasted slice of sourdough. Add your crispy fried egg on top and finish with the grated Parmesan and chopped parsley.
