ingredients
- Ingredients for the Potato Fries:
- 4 russet potatoes
- 1/4 cup olive oil (reserve 1 TB. for the end)
- a pinch of salt & pepper
- 1 teaspoon garlic powder
- 1 tablespoon minced fresh herbs (basil. oregano & thyme)
- 1 teaspoon sesame seeds
- Ingredients for the Pesto Dipping Sauce:
- 1/4 cup olive oil
- 1 clove of garlic
- 1/2 basil
- 1 tablespoon fresh oregano
- 1 tablespoon fresh thyme
- 2 tablespoons parmesan
- salt & pepper to taste
- (pulse together in a food processor or blender)
- Ingredients for the Russian Dressing:
- 1/4 cup ketchup
- 2 tablespoons mayonnaise
- 1 teaspoon horseradish
- 1 teaspoon Worcestershire sauce
- (stir together well)
- Extras:
- ketchup malt vinegar
Method
Step 1
Preheat oven to 450 degrees
Step 2
Wash and dry the potatoes
Step 3
Slice potatoes into 1/2" matchsticks and thin wedges
Step 4
Oil 2 cookie sheets and spread the potatoes out in a single layer on each pan
Step 5
Drizzle with most of the olive oil and coat the fries well. Sprinkle with the garlic salt, salt & pepper
Step 6
Bake for 25 - 30 minutes until golden brown and the ends get crispy and browned
Step 7
Remove from the oven and drizzle with the last TB. of oil.
Step 8
Sprinkle with the finely minced herbs, sesame seeds and more salt & pepper
Step 9
Serve hot from the oven along with small bowls of the dipping sauces, ketchup & a cruet of malt vinegar
