Cherry Tomato Confit

  • 2 cups cherry tomatoes
  • 2-3 tbsp olive oil
  • Salt and pepper, to taste
  • 1 garlic clove, minced


  • Step 1

    Preheat the oven to 300℉.

  • Step 2

    Spread tomatoes into a baking dish and drizzle with olive oil and sprinkle with salt, pepper and minced garlic. Mix to coat.

  • Step 3

    Roast for 40-60 minutes, until the tomatoes have burst and have a golden color.
