Serve with grilled or roasted tofu for a kick of protein!
- 3 cups broccoli florets
- 2 tablespoons currants
- 2 tablespoons sunflower seeds
- 1/ 2 red onion, chopped
- 1/ 4 cup tahini
- 1/ 4 cup water
- 1 clove garlic, chopped
- 1 tablespoon lemon juice
- 1 teaspoon tamari (or soy sauce)
- 2 teaspoon white miso
Bring a large pot of water to a rapid boil. Add florets and cook until crisp-tender, about 2 minutes. Prepare ice bath in a large mixing bowl with plenty of ice and water. Remove broccoli with a slotted spoon and place immediately in the ice water (allow to chill 4-5 minutes). Remove from ice and allow to dry off.
Combine tahini, water, garlic, lemon juice, tamari and miso in a food processor. Blend until smooth, about 1 minute.
Mix broccoli, seeds, currants, red onion and tahini dressing. Toss. Served chilled.
