Vegan Matcha Pearls

Matcha Pearls
(Makes 12 one-inch pearls)
Ingredients:
Pearl centre:
3 tablespoons coconut oil (35 g)
200 ml unroasted, natural almonds (120 g)
200 ml unroasted, natural cashews (110 g)
100 ml rolled oats (40 g)
3 tablespoons liquid sweetener of your choice
1 teaspoon vanilla (ground up vanilla pod) or 2 tsp liquid, natural vanilla extract
1 tablespoon ceremonial grade matcha powder
Coating:
4 tablespoons cold pressed raw coconut oil (45 g)
1/4 teaspoon vanilla (ground up vanilla pod) or 1/2 tsp liquid natural vanilla extract
1/2 tablespoon ceremonial grade matcha powder
Directions:
1. Melt the coconut oil in a bain the marie.
2. Blend the almonds, cashews and oats to a coarse flour.
3. Add the coconut oil, sweetener, vanilla & matcha. Blend until mixed well.
4. Shape into 12 pearls and chill in freezer.
5. Melt the coconut oil for the coating in the bain the marie, whisk in vanilla and matcha.
6. Coat the pearls twice, freezing them in between coats.
Store in an airtight container in your fridge. Enjoy!
