- 1 can tuna in spring water, drained
- 1/2 red pepper, chopped
- 1/2 red onion, chopped
- 2 tablespoons mayonnaise
- Salt and pepper, to taste
- 1 lemon, juiced

Step 1
Wash the potato thoroughly and pat dry. Pierce the potato several times with a fork. Wrap the potato in kitchen roll and microwave on high for 7 minutes.
Step 2
Preheat the air fryer to 200°C (392°F). Remove the potato from the microwave, unwrap it, and coat it lightly with olive oil. Sprinkle salt over the potato. Place the potato in the air fryer and cook for 15 minutes, until the skin is crispy.
Step 3
In a bowl, combine the drained tuna, chopped red pepper, and chopped red onion.
Step 4
Add the mayonnaise, salt, pepper, and lemon juice. Mix well.
Step 5
Once the potato is done, mash the potato with butter, salt, and pepper to taste.

Add the four cheese on top immediately and it should melt from the heat.

Spoon the prepared tuna filling on top.
