Sourdough Baking w/ Red Star

Bread is a given here at Feedfeed Brooklyn, where it plays a role in breakfast, lunch, and (our favorite) tea time. Even though we have a few favorites, nothing beats homemade bread, fresh from our oven. Red Star Yeast, a staple here in the test kitchen, raised the bar with their new Platinum Instant Sourdough, just in time for cozy baking sessions. Sourdough’s unique flavor without the time and effort of maintaining a starter? Sign up this hungry office of bread enthusiasts!

Our friends at Red Star called in brand partner Zoe Francois, easy bread baking queen of @zoebakes, to lead a night of carbs for a group of baking-minded Feedfeed community members. Everyone enjoyed a delicious autumnal meal of Creamy Butternut Squash Soup, Sourdough Lavash and Cheese Board, Fall Grain Salad, and crudités with Roasted Garlic Hummus. To round it off, guests sampled Zoe’s Chocolate Sourdough Swirl Bread and Braided Raspberry Sourdough Brioche made with her Sourdough Brioche master dough.

After fueling up, the group gathered around while Zoe demonstrated how to use the Platinum Instant Sourdough Yeast from Red Star in her no-fuss brioche dough. She explained her one bowl system, using a Danish dough whisk to easily incorporate all the ingredients together in a 6-quart Cambro bucket. Then Zoe showed how to twist babka, braid raspberry danish, and cut out doughnuts, yielding the fluffiest buttery sourdough treats, before sending everyone off to their own stations.

Dough whisks in hand, faced with a large bucket and bowls of ingredients, everyone tore open their packets of yeast and got mixing. Without the long kneading session of traditional bread, everyone soon set aside their dough to rise, and later bake at home (we all deserve a fresh-bread-scented house). Our community members, Red Star partners, and Feedfeed team finished off the night at the doughnut decorating stations. Soon chocolate ganache and sprinkles were flying as everyone packed up their doughnuts, fried by The Donut Pub.

As the night came to a close, we saw everyone off, happily carb-loaded (we’re looking at you, dough buckets!) with all the tools to make fresh, sourdough bread a staple in their own homes courtesy of Red Star– packets of Platinum Instant Sourdough Yeast from Red Star, a copy of Zoe’s book Holiday and Celebration Bread in Five Minutes a Day, apron, dough whisk, round cookie cutters, and a beautiful Emile Henry loaf pan, all packed in a tote.
