"TROPICAL STRAWBERRY CREAMSICLE We made it through the first week of back to school. Getting up so early after 2 months of summer was pretty challenging but we did it!! So proud of us. We deserve to celebrate. Celebrate!!! I think we do not do that enough. Celebrating small victories are important because they all add up and become the big victories. So today we are celebrating with all the moms and kids out there that made it through the first week of school!!!"

Recipe Card

ingredients

  • Pineapple Mango Cream:
  • 1 cup cubed pineapple
  • 1 cup cubed mango
  • 1 tablespoon maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon maca powder
  • 2 tablespoon coconut cream
  • Strawberry Cream:
  • 1 cup fresh or frozen strawberries
  • 1/4 cup coconut cream
  • 1 tablespoon goji berry powder
  • 1 tablespoon maple syrup
  • Other:
  • 2 strawberries cut into thin round slices

Method

  • Step 1

    Blend together ingredients for the Pineapple Mango Cream until smooth.

  • Step 2

    Pour into 6 popsicle molds. filling them 2/3 to the top.

  • Step 3

    Bend all the Strawberry Cream ingredients together until very smooth.

  • Step 4

    Press a thin strawberry slice on the inside of each popsicle molds until it sticks. Slowly fill the rest of the popsicle molds to the top (with the strawberry cream) covering the strawberry slices that is sticking to the side of the molds.

  • Step 5

    Place a popsicle stick into each popsicle. If the sticks don't want to stay in place, place the molds in freezer for 30 minutes and then see if sticks will stay in place.
