Wanted to show you guys just how versatile fresh rice noodles can be. I’m making one of my favorites Pad See ew with chicken. Don’t let all the ingredients intimidate you. This is a quick and easy stir-fry.

Noodles

ingredients

  • 1 pound fresh rice noodles
  • 6 ounces chicken thighs, marinated in 1.5 tablespoons of soy sauce
  • 2 eggs
  • 3 garlic cloves, minced
  • 5 pieces broccoli
  • 4 tablespoons oil

Sauce

ingredients

  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons golden mountain sauce
  • 1 tablespoon Thai dark soy sauce
  • 1 tablespoon sugar
  • White pepper, to taste
  • Chili vinegar, to finish

Method

  • Step 1

    Marinate the chicken thighs in soy sauce for a minimum of 30 minutes.

  • Step 2

    Bring a skillet with oil to medium-high heat. Sear the chicken until 80% cooked, then remove from pan.

  • Step 3

    Add minced garlic and whole eggs into the skillet, then break up the eggs a little bit using a spatula.

  • Step 4

    Add in the broccoli and rice noodles. Sear for a few mintues.

  • Step 5

    Top the noodle mixture with the sauce and return the chicken to the pan. Top with chilis and serve.
