Noodles
ingredients
- 1 pound fresh rice noodles
- 6 ounces chicken thighs, marinated in 1.5 tablespoons of soy sauce
- 2 eggs
- 3 garlic cloves, minced
- 5 pieces broccoli
- 4 tablespoons oil
Sauce
ingredients
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons golden mountain sauce
- 1 tablespoon Thai dark soy sauce
- 1 tablespoon sugar
- White pepper, to taste
- Chili vinegar, to finish
Method
Step 1
Marinate the chicken thighs in soy sauce for a minimum of 30 minutes.
Step 2
Bring a skillet with oil to medium-high heat. Sear the chicken until 80% cooked, then remove from pan.
Step 3
Add minced garlic and whole eggs into the skillet, then break up the eggs a little bit using a spatula.
Step 4
Add in the broccoli and rice noodles. Sear for a few mintues.
Step 5
Top the noodle mixture with the sauce and return the chicken to the pan. Top with chilis and serve.
