For the salad
ingredients
- 4 cups Baby spinach
- 1/4 cup feta cheese, cubed
- 1/4 cup pomegranate arils, plus more for garnish
- 2 tablespoons almonds, roughly chopped, plus more for garnish
For the dressing
ingredients
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon yogurt
- 1 teaspoon tahini
- 1/2 teaspoon agave syrup or honey
- salt
- pepper
Method
Step 1
In a medium bowl, or a blender, add all dressing ingredients together. Mix or blend together to combine fully.
Step 2
Add all of the salad ingredients to a large bowl. Add the dressing and toss the salad. Top with more pomegranate seeds and almonds, if desired.
