Perfect for spring time-what could be better than a big bowl of spinach topped with salty feta, sweet pomegranate, and toasty almonds tossed together in a creamy honey lemon dressing?

For the salad

  • 4 cups Baby spinach
  • 1/ 4 cup feta cheese, cubed
  • 1/ 4 cup pomegranate arils, plus more for garnish
  • 2 tablespoons almonds, roughly chopped, plus more for garnish

For the dressing

  • 1/ 4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon yogurt
  • 1 teaspoon tahini
  • 1/ 2 teaspoon agave syrup or honey
  • salt
  • pepper


  • Step 1

    In a medium bowl, or a blender, add all dressing ingredients together. Mix or blend together to combine fully.

  • Step 2

    Add all of the salad ingredients to a large bowl. Add the dressing and toss the salad. Top with more pomegranate seeds and almonds, if desired.
