Summer Berry Salad

with Raspberry Poppy Vinaigrette

1 cup pea shoots

1 cup yellow zucchini, sliced

1 cup beets, sliced

1 avocado, sliced

1/2 cup garbanzo beans

1/2 cup raspberries

Raspberry Poppy Vinaigrette Dressing

3/4 cups avocado oil

1/4 cup lemon juice

1/4 cup raspberries

1/2 teaspoon poppy seeds

2 garlic cloves

1 tbsp maple syrup

1 tbsp lemon zest

1/2 tsp of salt

1/2 tsp of pepper


In a large bowl, place 1/2 cup raspberries, zucchini, beets, pea shoots, garbanzo beans, avocado.

To make the vinaigrette, emulsify avocado oil, lemon juice, raspberries, poppy seeds, garlic, maple syrup, lemon zest, salt and pepper in a high-speed blender.

Drizzle vinaigrette over salad and serve.
