Pistachio Butter:
- 2 cups roasted, unsalted pistachios

Nougat Base:
- 12 soft Medjool dates, pitted
- 1 cup raw almonds
- 1/4 teaspoon sea salt

- 1/2 cup chopped pistachios
- 1 cup dark chocolate, melted
- Extra sea salt and chopped pistachios, for garnish
Method
Step 1
Make the pistachio butter: In a high-speed blender or food processor, blend the roasted pistachios until smooth and creamy. Scrape down the sides as needed. Set aside.
Step 2
Make the nougat layer: In a food processor, combine dates, almonds, and sea salt. Pulse until the mixture is sticky and holds together when pressed.
Step 3
Press the nougat mixture firmly into a parchment-lined loaf pan or small baking tray.
Step 4
Spread a thick, even layer of pistachio butter over the nougat. Sprinkle with 1/2 cup chopped pistachios.
Step 5
Place the tray in the freezer for at least 1 hour, or until fully firm.
Step 6
Once set, cut into rectangular bars. Dip each bar in melted dark chocolate, then sprinkle with a pinch of sea salt and extra chopped pistachios.
Step 7
Return the bars to the freezer for another 15 minutes to let the chocolate harden.
Step 8
Store in the freezer and let sit at room temperature for a few minutes before eating for best texture.
