Chopped Broccoli and Cauliflower Salad

4 cups Earthbound Farm Riced Cauliflower and Broccoli Blend

1/3 cup slivered almonds, toasted

1/3 cup dried cranberries

4 bacon slices, cooked and crumbled, optional

1/4 cup finely chopped red onion

1/3 cup canola mayonnaise

3 tablespoons Greek yogurt

1 tablespoon cider vinegar

1 tablespoon honey

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper


In a large bowl, combine riced vegetables, almonds, cranberries and red onion. In a small bowl stir together mayonnaise, yogurt, vinegar, honey, salt and pepper. Combine dressing with vegetable mixture and let sit at least 20 minutes before serving for flavors to marry.
