- 4 eggs
- 2 tablespoon minced jalapeño
- kosher salt and cracked pink peppercorns (or black pepper), to taste
- 1 cup cheddar cheese
- butter, as needed
- cilantro, for garnish (optional)
Heat a small nonstick skillet over medium heat. Coat with a small amount of butter. Sprinkle 1/4 cup cheese evenly over the hot pan and let cook for about 2 minutes, or until the edges begin to brown. Flip, carefully, with a thin spatula and sprinkle with the 1/2 tablespoon jalapeño and season with salt and cracked pepper. Cook for another 2 minutes, or until crispy.
Set aside while you cook the egg. In same skillet, melt a pat of butter and crack egg in the center and fry for 1-2 minutes per side or until done to your liking. Season with salt and pepper and add to center of cheese crisp. Repeating with remaining eggs and cheese. Fold up, and enjoy!
