ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons maple syrup
- 1 teaspoon salt

- 2 cups cornflakes (I used gf)
- Salt & pepper

- 1/4 cup water
- 2 tablespoons soy sauce (use gluten-free if need)
- 1 cup Buckwheat flour
- Vegan mozzarella cheese
Method
Step 1
Rinse the rice with cold water until the water runs clear. Transfer into a pot and add the boiling water, cover with a lid and cook for about 15 minutes or until the rice is cooked.
Step 2
Meanwhile, prepare 3 bowls. First- blend the cornflakes with salt & pepper. In the second bowl, mix water with cornstarch and soy sauce. And to the last bowl add buckwheat flour. Lastly, cut the mozzarella cheese into cubes.
Step 3
Once the rice is cooked, transfer it immediately to a large mixing bowl and add the vinegar, maple syrup and salt. Use a spatula to very gently fold the rice. Let it cool for a bit.
Step 4
Cover your hands with water and a sprinkle of salt, add a large tbsp of cooked rice to your hand, add 1 cube of cheese, and cover with more rice. Press and roll until you have a large rice ball. Repeat until there’s no rice left.
Step 5
Dip the balls in the flour, then the cornstarch mixture, and lastly in the cornflakes breadcrumbs. Fry the balls until golden and crispy. ENJOY!
