Pumpkin Puncakes

"Just making the Halloween cut off with these pumpkin pancakes that I tried to make look like a pumpkin. They were wickedly delicious and I GOBBLED them down extra quick."

  • 1 1/4 oat flour
  • 2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 1/2 teaspoon pumpkin pie spice
  • 3/4 cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup almond milk
  • 2 tablespoon greek yogurt
  • 1 teaspoon maple syrup
  • Chocolate chips
  • Maple syrup or black coconut butter


  • Step 1

    Whisk the flour, baking powder, sea salt and pumpkin pie spice in a medium bowl. Then, add the pumpkin puree, egg, vanilla extract, almond milk, and greek yogurt. Mix until combined.

  • Step 2

    Place the batter in the fridge for 10 minutes to thicken. Then, heat up a pan and use a bit of coconut oil to grease.

  • Step 3

    Four 1/4 cup of batter onto the heated pan, and cook each pancake for about 2-3 minutes per side.

  • Step 4

    Optionally, sprinkle the pancakes with chocolate chips while cooking and drizzle with maple syrup or black coconut butter when ready to eat.
