ingredients
- 1 1/4 oat flour
- 2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 1/2 teaspoon pumpkin pie spice
- 3/4 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup almond milk
- 2 tablespoon greek yogurt
- 1 teaspoon maple syrup
- Chocolate chips
- Maple syrup or black coconut butter
Method
Step 1
Whisk the flour, baking powder, sea salt and pumpkin pie spice in a medium bowl. Then, add the pumpkin puree, egg, vanilla extract, almond milk, and greek yogurt. Mix until combined.
Step 2
Place the batter in the fridge for 10 minutes to thicken. Then, heat up a pan and use a bit of coconut oil to grease.
Step 3
Four 1/4 cup of batter onto the heated pan, and cook each pancake for about 2-3 minutes per side.
Step 4
Optionally, sprinkle the pancakes with chocolate chips while cooking and drizzle with maple syrup or black coconut butter when ready to eat.
