ingredients
- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon coriander
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 beaten eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 quart vegetable oil
- for dusting powdered sugar
Method
Step 1
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, cinnamon, coriander, nutmeg, and salt.
Step 2
Combine Wet Ingredients: In another bowl, mix the pumpkin puree, beaten eggs, milk, and vanilla extract.
Step 3
Make Batter: Add the wet ingredients to the dry ingredients and stir until just combined. The batter should be thick but still spoonable.
Step 4
Heat Oil: In a deep skillet, heat about 2 inches of vegetable oil to 350°F (medium heat).
Step 5
Fry Fritters: Carefully drop spoonfuls of batter into the hot oil. Don’t overcrowd the pan. Fry in batches if necessary. Fry the fritters for about 2-3 minutes on each side or until they are golden brown and cooked through.
Step 6
Drain: Remove the fritters with a slotted spoon and drain them on paper towels to remove excess oil.
Step 7
Serve: While still warm, dust the fritters with powdered sugar. Serve the pumpkin fritters warm.
