Salad
ingredients
- 1 can chickpeas, rinsed and drained
- 1/3 cup fresh basil, chopped
- 1 1/2 cups cooked quinoa
- 2 cups arugula
- 1/3 cup crumbled feta cheese
- 4 cups roasted butternut squash
- 1 apple, diced
- 1/3 cup dried cherries
Dressing
ingredients
- 1/2 lemon, juiced
- 3 tablespoons olive oil
- 1/2 tablespoon honey
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
- 1/4 teaspoon garlic powder
Make the Salad
Method
Step 1
Peel and chop the squash. Toss squash in olive oil and salt. Transfer to a baking sheet covered with parchment paper and bake at 425F for 30 minutes flipping halfway tough.
Step 2
Add arugula, squash, quinoa, feta, apples, dried cherries, basil, chickpeas to a large bowl. Set aside.
Make the Dressing
Step 1
In a small cup stir together olive oil, balsamic vinegar, lemon juice, honey, salt, pepper and garlic powder.
Assembly
Step 1
Add dressing and squash to the salad. Toss well and enjoy!
