Butternut Squash and Goat Cheese Pasta

Who remembers the feta pasta trend from 2021? Well, this baked pasta dish is heavily inspired by that trend, but with a few twists. Instead of feta cheese and tomatoes, we bake butternut squash and goat cheese together. Once the pasta and pasta water gets added to the mix, it becomes a delightfully creamy dish that packs a ton of flavor from lots of garlic, thyme, and hot honey (in addition to the yummy goat cheese & squash!) This is super cozy, comforting, and easy to make.

ingredients
- 1 large butternut squash, cut into small cubes
- 1/2 cup extra virgin olive oil
- 1 teaspoon Kosher salt
- freshly cracked pepper, to taste
- 8 ounces goat cheese
- 1 pound pasta
- 1 tablespoon fresh thyme leaves, chopped
- 5 garlic cloves, finely minced
- 1 tablespoon hot honey
Method
Step 1
Preheat oven to 400°F. Evenly coat butternut squash cubes with olive oil, Kosher salt, and fresh cracked pepper. Place the butternut squash in a large baking dish, and place the goat cheese in the middle. Bake for 30-40 minutes, or until the butternut squash is fork tender.
Step 2
Meanwhile, cook the pasta in heavily salted water. Once it’s al dente, strain the pasta and save two cups of the pasta water.
Step 3
Once the butternut squash is cooked, remove the baking dish from the oven and stir in the minced garlic, thyme, and hot honey. Next, add the cooked pasta plus one cup of pasta water, and stir everything together. If the pasta is too try, add more pasta water and stir it in until everything is nice and creamy. Taste for seasoning, adding more salt, pepper, and honey if you like. Enjoy!
