A source of energy (bread), protein (eggs), fats (avocado & pesto), and array of vitamins and minerals (like vitamin A, D and E!)ā£. ā£ ā£ā£Foods arenā€™t often exclusively made up of one macronutrient (i.e. protein, carbs or fats) or micronutrients (vitamin & minerals), and are instead a combination (e.g. the eggs whites are richer in protein, the egg yolks richer in fat). However, they do tend to lean with predominant nutrients - hence we classify them into food ā€˜groupsā€™, like grains, dairy, or fruit and vege. ingredients

  • 1 slice of bread, toasted
  • 1 egg
  • 1 tablespoon avocado, mashed
  • 2 teaspoons homemade or store bought pesto

Method

  • Step 1

    In a small pot, bring enough water to cover 1 egg to a boil. While the water is coming to a boil, submerge the egg in a small bowl with warm water. This will prevent the egg from cracking once it's submerged in hot water.

  • Step 2

    Once the water is boiling, gently lower the egg into the pot with a spider or ladle. Cook for 8 minutes. While the egg is cooking, fill a small bowl with ice water. Remove the egg from the pot and into the ice water.

  • Step 3

    While the egg is cooling, spread the mashed avocado onto the toasted bread. Then, peel the egg and cut into quarters. Add to the bread. Drizzle the pesto on and enjoy!
