ingredients
- 1 1/3 cups all-purpose flour
- 1/4 teaspoon salt
- 2 1/4 cups plus 2 tablespoons milk
- 3 eggs
- 1 tablespoon melted butter
Method
Step 1
In a large bowl, combine flour and salt. Add in half of the milk and whisk until smooth. Add in eggs, remaining milk and melted butter and whisk again until you have a smooth batter.
Step 2
Let the batter rest for 30 minutes or in the fridge overnight. Heat a nonstick pan over medium-high heat. Brush with butter or oil. Pour a thin layer of the batter and swirl to cover the bottom of the pan.
Step 3
Cook until the edges are golden brown, 1-2 minutes. Gently flip and cook the other side for further 1 minute.
