Crepe Batter

  • 2 cup milk
  • 4 large eggs
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 all-purpose flour
  • 2 tablespoon Nutella, for drizzle

Mascarpone filling

  • 1 (8 ounce) container mascarpone
  • 3 tablespoons cold brew coffee
  • pinch kosher salt
  • 1 tablespoon powdered sugar

Method

To make the crepe batter

  • Step 1

    In a bowl, mix milk, eggs, sugar, vanilla, salt, and flour until batter is smooth. Refrigerate for least 30 minutes.

To make the mascarpone filling

  • Step 1

    While crepe batter is resting, in a small bowl, combine mascarpone, cold brew coffee, salt, and powdered sugar. [Note: Adjust amount of coffee depending on how strong you would like your filling to be.]

  • Step 2

    Mix with a whisk or a hand blender until incorporated. Keep refrigerated until ready to use.

To make the crepes:

  • Step 1

    Prepare a crepe maker or heat an 8-inch frying pan over medium-low heat.

  • Step 2

    Pour about ¼ cup batter into the pan and slowly tilt your pan in a circular motion coating the pan and forming an even circle.

  • Step 3

    Cook for about one minute per side, or look for a golden color to indicate the crepe being thoroughly cooked on each side. Set finished crepes onto a plate.

To assemble crepes:

  • Step 1

    Place the crepe on a plate with the best side facing down.

  • Step 2

    Spread a 1-2 tablespoons mascarpone filling over half the crepe.

  • Step 3

    Fold crepe in half, then fold over from edge of the crepe to the center to make a 3 inch triangle, repeat two more times.

  • Step 4

    Drizzle crepe with Nutella, dust with powdered sugar if desired.
