Cambodian Inspired Veggie Stir Fry

"Hey guys, about to sign off for the weekend and thought it was time for a savoury post. This is just a simple brown rice noodle stir fry. All vegan of course. I tried to make it Cambodian inspired after our trip to south east Asia last year. I'm not sure if I did it justice but it was yummy none the less. This was one of the very first recipes I put up on the blog along with a few photos from Cambodia (back when I thought I'd be filling my blog with travel photos) still really love this photo and I don't really eat Asian all that often so I thought it would be worth a re share ☺️I'm pleased to say that even though I still have a pesky cough I'm feeling much better today , my appetite has returned and I was able to do some experimenting in the kitchen! "
