These creamy Ferrero Rocher-inspired stuffed dates are perfect for when you need an indulgent treat but want to keep it wholesome. The combination of creamy mascarpone with chocolate and hazelnuts will satisfy any sweet tooth. Stuffing these dates with a roasted hazelnut and a small wafer cookie to replicate the crisp bite from a classic Ferrero Rocher candy, but the wafer cookie part is optional.

My family has always loved dates in their natural form, but lately we are really enjoying these stuffed dates inspired by candy bars and treats! I always use whole medjool dates and remove the pits myself because the pitted ones tend to dry out. Seek out the squishiest, caramelly-est dates you can find for this version to make rolling them even easier.

ingredients

  • 1/2 cup chocolate hazelnut spread (I used Chosen Foods brand)
  • 12 whole medjool dates
  • 12 whole roasted hazelnuts
  • 1/2 cup plus more for garnish (optional) finely chopped roasted hazelnuts
  • 3 cut into small pieces (optional) crispy wafer cookies
  • 1/3 cup mascarpone cheese

  • Step 1

    Line a small baking sheet or plate with parchment paper or wax paper.

  • Step 2

    Warm the chocolate hazelnut spread in the microwave or a low oven until it reaches a pourable consistency.

  • Step 3

    Tear the dates in half but try not to separate the two pieces. Remove and discard the pits.

  • Step 4

    Fill each date with one teaspoon of mascarpone cheese and top with one whole roasted hazelnut and a piece of wafer cookie, if using. Pinch the two date halves together to adhere. Repeat until all dates are stuffed. Roll the dates into a ball, if desired, to give them the look of true Ferrero Rocher candies. This step is optional.

    Skewer the stuffed dates onto a toothpick, bamboo skewer, or cake tester and coat evenly in the warm chocolate hazelnut spread, letting the excess drip back into the bowl. Arrange the dipped dates on the prepared baking sheet. Sprinkle each date with chopped hazelnuts, if desired, and let set in a cool spot away from any heat sources.
