Chocolate Shell:
1/2 cup cacao powder
1/4 cup melted coconut oil
2 ½ tbsp melted cacao butter
2 tbsp coconut nectar
Vanilla Cream Center:
1 cup coconut cream
2 tbsp coconut palm sugar
½ tsp of vanilla bean paste
3 tbsp melted coconut oil
Method:
Combine chocolate ingredients in a blender or food processor, and pour into mini paper cups. Blend or process the vanilla filling ingredients, and use a melon baller to drop scoops into the chocolate in the cups. Pour chocolate filling to cover the vanilla ball, and set the cups in the refrigerator (or freezer) for an hour.
Serve whole, or slice. If you intend to slice, warm the knife in boiling water first to prevent breakage. Enjoy!
