Creamy Carrot-Coconut Pasta with Zucchini

- 1 pound pasta of choice, cooked according to package directions
- 2 large carrots, steamed
- 1/ 3 cup coconut milk
- 1/ 4 cup fresh orange juice
- 1 tablespoon almond butter
- 2 garlic cloves
- salt and pepper to taste
- roasted zucchini, sprouts, sesame seeds, for garnish (optional)
To make the carrot sauce, blend the steamed carrots, coconut milk, orange juice, almond butter, garlic, salt and pepper in a Vitamix blender. Mix the pasta with the prepared carrot sauce. Top the pasta with roasted zucchini, sprouts, and sesame seeds.
