Creamy Carrot-Coconut Pasta with Zucchini

Carrot, coconut & orange pasta; my new favorite for sure! It's creamy, kinda sweet, with a little bit of spice! The sauce is so delicious. You can use it in other savory dishes like rice and salads. -@goodnessavenue

ingredients

  • 1 pound pasta of choice, cooked according to package directions
  • 2 large carrots, steamed
  • 1/3 cup coconut milk
  • 1/4 cup fresh orange juice
  • 1 tablespoon almond butter
  • 2 garlic cloves
  • salt and pepper to taste
  • roasted zucchini, sprouts, sesame seeds, for garnish (optional)

Method

  • Step 1

    To make the carrot sauce, blend the steamed carrots, coconut milk, orange juice, almond butter, garlic, salt and pepper in a Vitamix blender. Mix the pasta with the prepared carrot sauce. Top the pasta with roasted zucchini, sprouts, and sesame seeds.
