"A one-pan dish I can get behind! The tortellini is cooked to start with so not entirely a one-pot meal but so so easy. The longest step is just cooking down the tomatoes and that takes about ten minutes max! I liked it with a cheese tortellini but veggie filled or meat filled would be great too!"

  • 2 teaspoons olive or avocado oil
  • 1 shallot, diced
  • 2 garlic cloves, minced
  • 2 cups cherry or grape tomatoes
  • 1/2 cup roasted red peppers
  • 1 tablespoon tomato paste
  • 1/2 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1/8 teaspoon black pepper
  • 1 cup heavy cream
  • 3/4 cup parmesan cheese, divided
  • 2 cups chopped spinach
  • 3 cups cooked cheese tortellini

Method

  • Step 1

    Heat a skillet over medium heat. Warm up oil and cook shallots and garlic for about 3 minutes, being careful not to burn the garlic.

  • Step 2

    Toss in tomatoes and cook down for ten minutes until softened. Gently push down the back of the tomatoes to release some liquid and help them burst slightly.

  • Step 3

    Add spices, red peppers, and tomato paste. Stir and mix in cream. Let it simmer for 2-3 minutes until the cream starts to darken in color.

  • Step 4

    Add in 1/2 cup of Parmesan cheese, cooked tortellini, and chopped spinach. Top with the remaining 1/4 cup of Parmesan cheese.

  • Step 5

    Adjust for salt, garnish with parsley or basil if desired.
