"I don't want to sound like I'm bragging; but as the UK is hit by snow this week, the temperature is still soaring as high as 35 degrees today here in Melbourne and it feels like we're still in the height of summer. So without further ado, I'll tell you about my cooling off pops that are a healthy version of kulfi - (Indian ice cream). They're made with yogurt, flavoured with strawberry and rasberry purée, a dash of rosewater and crushed pistachio to garnish. It doesn't cool the weather but it sure does feel cool on the palette . It's winner - winner, Popsicles for after dinner by @fredashafi_spiceitupMade with frozen yogurt with puréed strawberries, raspberries and rosewater, these are Perfect on those hotter days.

INGREDIENTS
2 cups plain Greek yogurt
200g strawberries, pulped
200g raspberries, pulped
Seeds from 2 cardamom pods or 1 tsp ground cardamom
1 Tbsp rosewater
1 Tbsp sugar (optional)
Chopped pistachios to garnish


DIRECTIONS
Combine all the ingredients in a blender / food processor. Fill popsicle moulds with the mixture and freeze overnight. Serve with chopped pistachio on a hot summers day.
