ingredients

  • 1 16 ounce package udon noodles
  • 3 cloves garlic, sliced
  • 1/2 yellow onion, sliced thin
  • 1/2 red bell pepper, sliced thin
  • 1/2 carrot, sliced into matchsticks
  • 1 3/4 ounces snow peas
  • 5 white mushrooms, sliced thin
  • 1 bunch scallions, chopped
  • 1/2 tablespoon sesame oil
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon Mirin
  • 1 tablespoon granulated sugar
  • 1 1/2 tablespoons neutral oil, for cooking
  • 1/2 teaspoon red chili flakes (optional)
  • 1/2 teaspoon soy caramel (optional)

Method

  • Step 1

    Cook the udon noodles according to the package instructions and set aside.

  • Step 2

    In a bowl, whisk together the sesame oil, Hoisin sauce, soy sauce, Mirin, and sugar. Set aside.

  • Step 3

    Heat oil in a frying pan or wok. Add garlic onion and sauté until fragrant. Add the pepper, carrots, peas, mushrooms, and scallions and stir fry for a couple minutes. Add the udon noodles, red pepper flakes (if using), and caramel (if using) and toss to combine.

  • Step 4

    Add the sauce and mix to coat well. Serve hot.
