ingredients
- 1 16 ounce package udon noodles
- 3 cloves garlic, sliced
- 1/2 yellow onion, sliced thin
- 1/2 red bell pepper, sliced thin
- 1/2 carrot, sliced into matchsticks
- 1 3/4 ounces snow peas
- 5 white mushrooms, sliced thin
- 1 bunch scallions, chopped
- 1/2 tablespoon sesame oil
- 2 tablespoons Hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon Mirin
- 1 tablespoon granulated sugar
- 1 1/2 tablespoons neutral oil, for cooking
- 1/2 teaspoon red chili flakes (optional)
- 1/2 teaspoon soy caramel (optional)
Method
Step 1
Cook the udon noodles according to the package instructions and set aside.
Step 2
In a bowl, whisk together the sesame oil, Hoisin sauce, soy sauce, Mirin, and sugar. Set aside.
Step 3
Heat oil in a frying pan or wok. Add garlic onion and sauté until fragrant. Add the pepper, carrots, peas, mushrooms, and scallions and stir fry for a couple minutes. Add the udon noodles, red pepper flakes (if using), and caramel (if using) and toss to combine.
Step 4
Add the sauce and mix to coat well. Serve hot.
