ingredients
- 4 slices ciabatta
- 4 egg yolks
- Panko
- 3 tablespoons quality butter
- 1 tablespoon olive oil
- 1/2 teaspoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon crushed red pepper
- 1 teaspoon chipotle powder
- 1/2 teaspoon sumac
- Fresh dill
- Za’atar to taste
- 1/4 cup labneh
- 1 small garlic clove
- Squeeze of lemon to taste
- Salt and pepper to taste
Method
Step 1
Mix together the labneh, lemon , salt/pepper and grate garlic.
Step 2
Melt some butter in a pan, add the olive oil, sumac, paprika, chipotle, honey, salt/pepper & crushed red peppers.
Step 3
Heat up some avocado oil, tilt the pan and carefully fry the yolks for 15 sec until golden. Make sure to baste the yolks with a spoon.
Step 4
Toast the bread, spread the yogurt, add some za’atar, fresh dill, the spicy butter and fried yolk.
