For the "Buttermilk"

- 3 cups soy milk (or milk of choice)
- 3 tablespoons white vinegar
For the Chicken
ingredients
- 3-4 pounds boneless, skin on chicken breast (or thighs)
- 1 cup "buttermilk" (above)
- 2 tablespoons Frank's Red Hot Sauce
- 1 tablespoon freshly ground black pepper, adjusted to taste
- 1 tablespoon kosher salt, adjusted to taste
- 1 tablespoon smoked paprika, adjusted to taste
- 1 tablespoon garlic powder, adjusted to taste
- 1 tablespoon cayenne pepper, adjusted to taste
- 1 tablespoon dried oregano
For the Dry Batter
ingredients
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- Freshly ground black pepper, to taste
- Kosher salt, to taste
- Smoked paprika, to taste
- Garlic powder, to taste
- Cayenne pepper, to taste
- Dried oregano, to taste
For the Wet Batter
ingredients
- 2 large eggs
- 1/2 cup "buttermilk" (above)
For the Protein Waffles
ingredients
- 1 cup all-purpose flour
- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1 tablespoon zero calorie sugar, adjusted to taste
- 1 large egg
- 1 cup "buttermilk" (above)
- 2 tablespoons organic coconut oil, melted
To make the "buttermilk"
Method
Step 1
Gently stir the soy milk and white vinegar together and let sit for 8-10 minutes to thicken.
To prepare the chicken
Step 1
Coat the chicken in dry rub on both sides, then soak it in buttermilk mixture. Cover and chill for at least 1 hour, or overnight for stronger flavor.
Step 2
Preheat oven to 375° F and line a baking pan with parchment. Coat with a thin layer of olive oil.
Step 3
Remove marinated chicken from fridge.
Step 4
In one bowl, whisk dry batter together. In a separate bowl, whisk wet batter.
Step 5
Dip marinated chicken in the dry batter, then wet batter, then dry batter again.
Step 6
Place chicken in the pan and bake for about 20 mins, gently flipping halfway.
To make the protein waffles
Step 1
Preheat a waffle iron.
Step 2
Whisk the dry ingredients well, then gently incorporate the wet ingredients.
Step 3
Fold until everything is just combined (do not over mix).
Step 4
Pour about 1/4 cup of batter into greased iron and cook until desired color/texture is reached, about 5 minutes.
Step 5
Serve the crispy "fried" chicken on top of the protein waffles, drizzled with maple syrup, and enjoy!
