ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup non-dairy milk
  • 2 teaspoons lemon juice
  • 2 tablespoons maple syrup, optional
  • 1 teaspoon vanilla extract
  • 1 1/4 cups oat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup frozen cherries
  • 1/4 cup dark chocolate chips

Method

  • Step 1

    Whisk together the applesauce, milk, lemon juice, maple syrup, and vanilla. Add the dry ingredients. Stir to combine, being careful not to over mix. Gently fold in the frozen cherries and chocolate chips.

  • Step 2

    Heat a non-stick pan over low heat. Scoop pancake batter into pan and cook until bubbles form on the edges, about 3 minutes, then flip and continue cooking until cooked through.
