ingredients
- 1 ripe banana
- 1/2 cup apple purée
- 1/4 cup maple syrup
- 1 tablespoon fresh squeezed lemon juice
- 1/4 cup any dairy free yogurt (such as almond or soy)
- 3/4 cup almond milk
- 1 1/4 cups buckwheat flour
- 3/4 cup almond flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 small apple, peeled and cubed into small pieces (plus more for decoration)
- a pinch of cinnamon
- a pinch of ground nutmeg
- a pinch of ground ginger
Method
Step 1
Mix together wet ingredients in a bowl and slowly add in dry ingredients. Fold in chopped apple (pieces should be small enough so they cook through).
Step 2
Pour batter into a lined baking tray and add apple slices on top for decoration.
Step 3
Bake in a preheated oven at 180º C (350ºF) for approximately 35 minutes.
