ingredients
- 1 cup long grain rice
- 2 tablespoons butter
- 1/4 white onion, diced
- 1/2 teaspoon dry thyme
- 1 teaspoon Jamaican-style curry powder
- 1 tablespoon tomato paste
- 1/2 cup Egunsi Foods' Ata Din Din Sauce (Red Pepper)
- 2 cups chicken broth
- 1 beefsteak tomato, sliced
- 1/4 sliced white onion
Method
Step 1
Rinse and strain the rice. In a large saucepan over medium heat, add rice and butter. Add diced onion and sauté for 5 minutes. Add thyme, curry and tomato paste, sauté again for about 3 minutes.
Step 2
Add Egunsi Foods' Ata Din Din Sauce (Red Pepper) and broth. Taste and add salt as desired. Cover with an oven safe lid. Once it begins to steam, add sliced tomatoes and onion, cover with a lid, then place in a 350°F oven and let cook for 30 minutes.
Step 3
Fluff and serve. Can be paired with fried plantains and meat of your choice.
