- 3 cups pasta
- 1 onion, diced
- 1 cup mushrooms
- 3 garlic cloves
- 3 tablespoons tomato puré
- 1 can full fat coconut milk
- 1 teaspoon red chili flakes
- salt & pepper, to taste
Cook you pasta according to package instruction.
Sauté onion. In a frying pan for 3 minutes or until fragrant.
Chop up mushrooms and add to the frying pan, fry for another 5 minutes.
Add minced garlic and stir for another minute. Add tomato paste, coconut milk, chili flakes, salt and pepper to taste.
Let everything cook on medium high heat for a few minutes.
Add your cooked pasta to the pan. Serve with fresh herbs or leafy greens.
