Get dinner on the table in less than 30 minutes with this easy and flavorful tomato mushroom pasta. Tender mushrooms and pasta are tossed in a creamy tomato sauce made of coconut milk.

ingredients

  • 3 cups pasta
  • 1 onion, diced
  • 1 cup mushrooms
  • 3 garlic cloves
  • 3 tablespoons tomato puré
  • 1 can full fat coconut milk
  • 1 teaspoon red chili flakes
  • salt & pepper, to taste

Method

  • Step 1

    Cook you pasta according to package instruction.

  • Step 2

    Sauté onion. In a frying pan for 3 minutes or until fragrant.

  • Step 3

    Chop up mushrooms and add to the frying pan, fry for another 5 minutes.

  • Step 4

    Add minced garlic and stir for another minute. Add tomato paste, coconut milk, chili flakes, salt and pepper to taste.

  • Step 5

    Let everything cook on medium high heat for a few minutes.

  • Step 6

    Add your cooked pasta to the pan. Serve with fresh herbs or leafy greens.
