I used to be intimidated to make these, but now realize they are simple and can even be made in advance. In fact, when I make them, I make extra batches and freeze some. For an instant dessert, just reheat straight from the freezer and let them cool. They will be just as crisp as if you made them fresh. As a time saver, you could fill them with whipped cream and raspberry jam. YUM! If you want to make them look a little fancier without a lot of extra effort, use a large star tip to pipe out the pate a choux. They are so pretty this way. "
