  • 4 1/4 cups (510 grams) strong bread flour
  • 3 1/4 cups (780 grams) water
  • 1 cup (240 grams) active starter
  • 1/2 cup (110 grams) brown butter

Method

  • Step 1

    In a large mixing bowl, combine the strong bread flour and water. Mix until a shaggy dough forms. Cover the bowl with a clean kitchen towel and let it rest for 30 minutes. This is known as autolyse and helps improve the dough's extensibility.

  • Step 2

    Add the active starter to the dough and mix until well combined. Incorporate the brown butter into the dough, ensuring an even distribution.

  • Step 3

    Knead the dough on a lightly floured surface or in the bowl until it becomes smooth and elastic. This may take about 10-15 minutes.

  • Step 4

    Place the dough back into the bowl, cover it, and let it rise at room temperature until it has doubled in size. This usually takes about 4-6 hours, depending on the room temperature.

  • Step 5

    Once the dough has doubled, gently deflate it and shape it into a round loaf. Place the shaped dough into a well-floured proofing basket or a bowl lined with a floured kitchen towel, seam side down.

  • Step 6

    Allow the dough to undergo its second rise (proofing) for 2-3 hours, or until it has visibly expanded.

  • Step 7

    Preheat the oven to 450°F. If you have a Dutch oven, preheat it as well.

  • Step 8

    Carefully transfer the proofed dough to the preheated Dutch oven or onto a baking sheet. Score the top of the dough with a sharp knife.

  • Step 9

    Bake in the preheated oven for 25-30 minutes, or until the bread has a golden-brown crust and sounds hollow when tapped on the bottom.

  • Step 10

    Allow the bread to cool on a wire rack before slicing.
