  • 1 slice bread, toasted
  • 1/2 avocado, mashed
  • 3 strips bacon
  • 2 eggs
  • Goat cheese
  • 1/2 cup cherry tomatoes
  • Salt and pepper, to taste
  • Spices of your choice


  • Step 1

    Heat a pan over medium-high heat. Add the bacon to the pan and cook on each side for 1 - 2 minutes. Remove the bacon from the pan and place on a paper towel. Save the bacon fat to cook the tomatoes.

  • Step 2

    Add the tomatoes to the pan and sautee for 3 to 5 minutes until burst and softened. Sprinkle with salt.

  • Step 3

    Heat another pan with a bit of oil over medium heat. Whisk the eggs in a small bowl with a pinch of salt. Pour the eggs into the pan, and cook on low heat for 2-3 minutes, mixing constantly.

  • Step 4

    Spread the mashed avocado onto the toasted bread. Sprinkle with salt, pepper, and spices of your choice.

  • Step 5

    Arrange all the cooked food (bacon, eggs, tomatoes, and avocado toast) on a plate. Sprinkle the eggs with crumbled goat cheese.
