Are things starting to get spooky in your house?!

I've noticed Halloween decorations popping up everywhere, I think everyone here on the East coast was ready for the muggy weather to end. (And yes, I'll probably bring up Halloween all through October Meal Plans!)

This week we're jumping into some super easy recipes so you're not standing around in the kitchen after a long day of work. This light menu features lots of fresh vegetables and a variety of flavors ranging from Southwestern-inspired, Cajun, to Lebanese- and a Portuguese family recipe from Feedfeed team member @Myportuguesemother. MONDAY Vegetable Minestrone

Tuesday Braised Chickpeas with Spinach and Feta

Inspired by Lebanese cuisine, these tender chickpeas are braised and added to soft spinach with plenty of onion and garlic. We top it off with feta cheese and serve it up with rice for a delicious dinner!

THURSDAY Mixed Green Salad with Cashew Dressing

"Santa Fe Salad” with mixed greens, black beans, corn, dates, tofu feta, crispy fried onions, and Cajun tofu cubes with cilantro lime dressing....definitely a contender for fav salad ever. So great for large parties and really good as leftovers too. Try it this week!!! To make: fill your biggest salad bowl with mixed greens.

WEEKEND BONUS Squash Butter Doce de Abobora
