Fish Marinade
ingredients
- 400 gram moda fish
- 15 gram Curry powder
- 5 gram Turmeric powder
- 5 gram Chili powder
- 1 teaspoo Salt
- 1 teaspoon Black Pepper
- 20 milliliter Oil
Gravy
ingredients
- 200 coconut milk
- 30 gram curry powder
- 20 gram chilli powder
- 10 gram turmeric powder
- 15 gram Curry Leaves
- 10 Rampe
- 1 stick cinnamon
- 4 cloves
- 2 black cardamom
- 20 milliliter Oil
- 25 Onion
- Salt
- 1/2 black pepper
Green coconut chutney
ingredients
- 100 gram grated coconut
- 1 fresh coriander
- 1 fresh mint
- 2 chillis
- 3 garlic cloves
- Salt & lime juice
- 1 teaspoon Sugar
King coconut &chilli salad
ingredients
- 100 gram young coconut
- 2 green chilli
- Salt
Preparing the fish
Method
Step 1
Mix all the above spices well for the fish marinade together and rub on the fish.
Step 2
Keep it for two hours to absorb the flavour.
Step 3
Heat 2 teaspoons of oil. Sear both sides of fish and cook until is it done.
Method for Gravy
Step 1
Heat the oil in a thick bottom pan and add onion, garlic, curry leaves and Rampethen cook till tender. Add curry powder, chilli powder and turmeric powder.
Step 2
Finally, add coconut milk to it and stir continuously. Season with salt, pepper and lime juice
Method for Green coconut chutney
Step 1
Put all the ingredients into a blender and whiz until you get a thick paste. Add little water if necessary. Taste and adjust the seasoning.
Step 2
Add lime juice for your preference.
Method for King coconut &chilli salad.
Step 1
Remove young coconut flesh from the coconut shell and cut into small pieces. Mix well with chopped green chilli. Salt to taste.
