Mushroom and Spinach Omelette with Avocado

"Omelettes are my favorite meals to make. They are super easy, I can throw any veggies in there and call it a day. My favorite flavor is garlicky mushroom spinach with feta. I usually have half an avocado on the side."

Sautéed mushrooms are so simple yet full of flavor! Adding them to an omelette is a great way to quickly enhance your morning breakfast! @crepesandbows tops it off with a little feta cheese, chili flakes, and a side of sliced avocado for the perfect breakfast combo!

  • 1/2 cup mushrooms, sliced `
  • handful of spinach
  • 2 eggs
  • splash of milk
  • 1 tablespoon crumbled feta
  • garlic salt, to taste
  • pepper, to taste
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons ghee
  • 1/2 avocado, sliced `


  • Step 1

    Preheat your skillet to medium heat, melt ghee and add mushrooms. Sauté for a few minutes and season with garlic salt and pepper.

  • Step 2

    Add spinach and cook until spinach is wilted. It takes only 1-2 minutes. Set aside.

  • Step 3

    Whisk eggs with milk until well combined. Pour the egg mixture into the pan and cook until it's halfway cooked through. Add mushroom and spinach mixture to the omelette (to the outer side), add 1 tbsp feta and flip the omelette over. Cook for a few minutes until the egg mixture is done to your preferred firmness.

  • Step 4

    Transfer to the plate and garnish with more crumbled feta and red chili flakes. Serve it as is or with a half sliced avocado.
