For the Crust (Optional):
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1/2 cup cold unsalted butter, cubed
- 2 - 3 tablespoons ice water
- Or substitute with a 9-inch store-bought pie crust

For the Filling:
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 1 tablespoon Better Than Bouillon Baked Ham Base
- 3 large eggs
- 1/2 teaspoon freshly ground black pepper
- 1 cup diced cooked ham
- 1 cup shredded Gruyère cheese
- 1/2 cup shredded smoked white cheddar cheese
- 1/4 cup finely chopped chives, plus 1 tablespoon reserved for garnish
- 1/2 cup sautéed asparagus, chopped
Method
Make the Crust (if using homemade):
Step 1
In a food processor, pulse flour and salt. Add cold butter and pulse until mixture resembles coarse crumbs.
Step 2
Slowly add ice water, 1 tablespoon at a time, pulsing until dough just comes together.
Step 3
Transfer dough to a floured surface, knead lightly into a disk, wrap, and chill for at least 30 minutes.
Step 4
Preheat oven to 375°F. Roll out the dough and press into a 9-inch pie dish. Prick the bottom with a fork and bake for 10–12 minutes, until lightly golden. Set aside.
Make the Custard:
Step 1
In a small saucepan over medium heat, combine milk and heavy cream.
Step 2
Whisk in Better Than Bouillon Baked Ham Base until fully dissolved and mixture is smooth. Bring just to a simmer, then remove from heat.
Prepare the Filling:
Step 1
In a large mixing bowl, whisk together eggs and black pepper.
Step 2
Slowly pour the warm cream mixture into the eggs, whisking constantly to temper and avoid curdling.
Step 3
Stir in the diced ham, Gruyère, cheddar, chives, and sautéed asparagus.
Assemble and Bake:

Pour filling into the pre-baked crust and spread evenly.

Bake at 375°F for 35–40 minutes, or until the center is set and lightly golden.
