Ricotta Lemon Mochi Pancakes

"This is easily one of the prettiest photos I’ve ever taken and these pancakes are definitely some of the yummiest. One of the last brunches I had in SF was with lemon ricotta pancakes. I guess I was missing SF bit so whipped up a stack for myself 😊 I made them with sweet rice flour instead of all purpose flour which makes them chewy and pillowy and also gluten free!"
