We'll be making this Bruschetta Baked Brie by @convinoboard all summer long. The cheese is baked until soft and gooey, then topped with a mixture of fresh tomato and basil. Serve this with a glass of white wine on a sunny evening.

ingredients

  • 1 wheel brie cheese
  • 1 roma tomato
  • Freshly chopped basil
  • 2 cloves chopped garlic
  • Olive oil
  • Balsamic vinegar

Method

  • Step 1

    Heat oven to 400°F. Bake brie in an oven safe dish for 15 minutes, or until the brie is soft and starts to ooze.

  • Step 2

    While baking, make the easy bruschetta mix. Combine chopped tomatoes, basil, garlic, olive oil and balsamic vinegar.

  • Step 3

    From here you have two options: 1) Add the bruschetta mix onto the brie and bake for 3 more minutes. 2) Add the chilled bruschetta mix to the brie after it is done baking. (It tastes great either way!)

  • Step 4

    Serve the warm brie with crostini, crackers or a fresh baguette.
